What’s the best thing about Chicken Satay? Everyone loves it and no one even realizes it is healthy! It is full of lean protein, very low in fat and oh so delicious! Take this to your next party – it is sure to be a hit!
The marinade for the chicken can be found here. As long as you have the peanut sauce, you could even get away with skipping the marinade to save some time.
Peanut-Coconut Dipping Sauce
- 1/4 cup chicken broth
- 1/2 cup coconut milk
- 1/2 cup peanut butter
- 1 Tbsp agave (or a squirt of honey)
- 1 clove garlic
- 2 Tbsp ginger
- 2 Tbsp reduced-sodium soy sauce
- juice of 1 lime
- 1 tsp chili paste
Blend all ingredients.
