tuna melts

Tuna melts are a meal that instantly bring me back to Saturday afternoons at home. Not only are they incredibly satisfying, filling and full of protein – but they are SO easy to make too!

Tuna Melts – Serves 4

  • 8 pieces whole-grain bread (ideally each slice should have at least 2-3 g of fiber)
  • 2 cans tuna (6 oz cans), water drained
  • 2 stalks celery, chopped
  • 1 Tbsp chopped onion
  • 2 Tbsp reduced-fat mayonaise
  • 8 Tbsp shredded cheese

Mix tuna, celery, onion, mayo and salt & pepper together. Evenly spread over 8 slices of bread. Sprinkle 1 Tbsp shredded cheese on each slice. Broil for 2-4 minutes until cheese has melted. *Be sure to watch while it is broiling, it can happen very quickly!
