strawberry-coconut smoothie

If fitting in breakfast is hard to do, smoothies are a great breakfast on-the-go!  As we stress at Camp Endeavor, skipping meals is no way to lose weight. In fact, it will set you up to over-eat later in the day. I can’t say it enough – Eat Your Breakfast!

I love smoothies in the morning for a couple of reasons – it is a great way to fit in a serving or two of fruit, a serving of milk and easy to add some protein as well! Oh, and it tastes like dessert! (Shhh 🙂 )

Strawberry-Coconut Smoothie – 1 serving

  • 3/4 cup frozen strawberries
  • 1 cup milk or dairy alternative (almond milk, coconut milk)
  • 1 serving of vanilla protein powder (or 1 Tbsp peanut butter)
  • Coconut: can use coconut oil or a drop or two of coconut extract

Blend until smooth.
