pasta with kale & bacon

Don’t let the kale scare you away! It is a great vegetable and when mixed with some whole-grain pasta and a little bacon it is a wonderful way to get vegetables and whole-grains in one meal!  Oh, and it is delicious! If you’ve tried kale already and don’t like it you can always substitute other green vegetables like broccoli rabe, swiss chard or even spinach.

Whole Wheat Pasta with Kale & Bacon 4 servings

  • 4 strips bacon
  • 8 oz whole wheat pasta
  • 1 Tbsp olive oil
  • 1 bunch kale, roughly chopped
  • 4 cloves garlic, minced
  • 1 tsp salt, pepper
  • parmesan cheese

Cook bacon until crisp, about 2 minutes per side, in large pan. Set aside and drain oil from pan. Cook pasta as directed and set aside. Add olive oil to pan and add kale, garlic, salt & pepper. Saute kale for about 2 minutes and add pasta to pan. Toss until combined. Top with crumbled bacon and 1 Tbsp freshly grated parmesan if desired.
