Everyone loves a good chicken salad, right? The perfect summer night dinner that can be prepared ahead of time and put together in minutes! Literally faster than fast food (so called)!
Chicken Salad – 4 servings
- 2 cooked chicken breasts, chopped
- 4 celery stalks, chopped
- 3 green onions, chopped
- 2 cups grapes, cut in half
- 2 Tbsp light mayo
- 2 Tbsp honey mustard dressing
- fresh ground pepper
Add all ingredients in large bowl and mix to combine. Refrigerate for at least an hour and serve on whole-grain bread or buns or lettuce. Corn on the cob or green beans are a great way to round out the meal.
