breakfast quesadilla

While this is called a breakfast quesadilla, it makes a great meal any time of the day!

The eggs provide a great source of protein and alongside vegetables, whole-grains and some fat/dairy from the cheese you’ve got a well-balanced meal.

Breakfast Quesadilla 2 servings

  • 2 whole grain tortillas (about 10 inches or 4 smaller ones)
  • 1/2 cup green pepper, chopped
  • 1/2 cup onion, chopped
  • 4 oz mushroom, chopped
  • 2 eggs and 1 egg white, whisked together
  • 2 cups spinach
  • 1/2 cup shredded cheese
  • toppings: salsa, guacamole and sour cream

Spray pan with cooking spray and add onions, peppers and mushrooms, stirring occasionally over medium heat. Add eggs and cook until set, 2-3 minutes. Heat large pan over medium heat. Place one tortilla in pan and layer with egg mixture, spinach and cheese. Top with the other tortilla and cook until cheese has melted. Serve with salsa, guacamole and sour cream.
