Cherry Chicken Pasta Salad

We all love the pasta salads that we find in the deli, but they are generally drowning in creamy dressings and mayo. The solution? Make your own! Then YOU have the say on what goes into it!

Cherry Chicken Pasta Salad – makes large bowl

  • 8 oz whole-grain penne
  • 8 oz cooked chicken, chopped
  • 3 oz dried cherries
  • 5 stalks celery, chopped
  • 1 bunch green onions, sliced
  • 1/4 cup light mayonaise
  • 1/2 cup poppy seed dressing

Prepare pasta as directed. Let cool. Combine mayo and poppy seed dressing and stir until combined. Toss with remaining ingredients. Refrigerate for 2 hours minimum. Serve over greens or straight from the bowl!

Serving size: 1 1/2 cups
