This past year, I made a big batch of sloppy joes on the last day of camp. They were a little different from the sloppy joes you may be used to but they got pretty good reviews!
The recipe couldn’t be simpler – especially if you have a crock pot!
Crock Pot Sloppy Joes – 4 servings
- 1 lb lean ground beef or lean turkey
- 1 can garbanzo beans, rinsed and drained
- 1 green pepper
- 1/2 yellow onion
- 2 zucchini
- 2 tomatoes
- 1 can sloppy joe mix
Add meat to crock pot (turned on high), breaking up meat as it cooks.
Prepare remaining ingredients: chop green pepper, onion, zucchini and tomatoes.
When the meat has started to brown add remaining ingredients and stir to combine.
Let cook on medium for about 4 hours, high for 2-3 hours.
Serve on buns, or bread with a side of veggie sticks and ranch dressing.
