back to school lunches

By now, you should all be back in the swing of the school days! The summer is long behind us, though never forgotten, the trees are changing color and there is a crispness in the air. Fall is officially here and you are probably already sick of hot lunch.

I’ve got just the answer – these lunches are easy to pack ahead of time, pretty inexpensive, well rounded and definitely tasty!

Here are some great lunch box options!

Dippers: Whole grain pita bread, hummus, cucumber, carrot, apple slices & peanut butter.

On the Go: The classic peanut butter & jelly on whole grain bread. Serve with some veggie slices.

Italiano: Antipasto plate – 1 oz cubed cheese, turkey and/or ham cubes, olives, pepperocini, 1/2 cup chopped green pepper, 1/2 cup grape tomatoes – all tossed with 1 Tbsp italian dressing. Serve with whole grain crackers.

Classic: Turkey sandwich on whole grain bread – 1 serving deli turkey meat, 1/2 Tbsp reduced-fat mayo, avocado slices, lettuce, tomato, onion, cucumber, etc. Serve with 1 cup grapes.

Mexicano: Tortilla chips and black bean dip – 1 serving tortilla chips, 1/2 cup black refried beans, 2 Tbsp shredded cheese, 2 Tbsp salsa. Serve with 1/2 cup cucumber slices and orange segments.
